There’s no shortage of food safety news; there is a shortage of evidence-based, incisive approaches that challenge food safety norms and may eventually lead to fewer sick people.
The International Food Safety Network evolved into bites.ksu.edu over the past year as a way of consolidating and making food safety news delivery more efficient. In addition to the web repository, the bites-l electronic newsletter is distributed 2-3 times a day to a dedicated subscriber base of some 10,000 in 60 countries; a list that has been focused and refined by offering continuous, daily food safety news since 1994. barfblog.com – averaging well over 10,000 unique hits a day -- along with weekly food safety infosheets (available in multiple languages), and videos, are now prominent food safety resources.
Sponsorship opportunities are now available for bites.ksu.edu, barfblog.com, and the bites-l listserv (as well as the infosheets and videos; how about a movie?).
In addition to the public exposure – why not stick your company logo on the bites-l newsletter that directs electronic readers to your home site or whatever you’re flogging that week -- and reaching a desired audience, you can receive custom food safety news and analysis. The listserv has been issued continuously since 1995 and is distributed daily via e-mail to thousands of individuals worldwide from academia, industry, government, the farm community, journalists and the public at large.
The listserv is designed to:
• convey timely and current information for direction of research, diagnostic or investigative activities;
• identify food risk trends and issues for risk management and communication activities; and
• promote awareness of public concerns in scientific and regulatory circles.
The bites listserv functions as a food safety news aggregator, summarizing available information that can be can be useful for risk managers in proactively anticipating trends and reactively address issues. The bites editor (me – dp) does not say whether a story is right or wrong or somewhere in between, but rather that a specific story is available today for public discussion.

• using verbal narrative, or storytelling, as a message delivery device.
Food safety infosheets are based on stories about outbreaks of foodborne illness sourced from the bites listserv. Four criteria are used to select the story: discussion of a foodborne illness outbreak; discussion of background knowledge of a pathogen (including symptoms, etiology and transmission); food handler control practices; and emerging food safety issues. Food safety infosheets also contain evidence-based prescriptive information to prevent or mitigate foodborne illness related to food handling. They are now available in French, Spanish and Portugese.

People often ask me, “Doug, how do you choose the information that goes in bites.ksu.edu? Do you have a basis for any of your food safety rants on barfblog? Why are you such a jerk?

When we ran the food safety information centre back in Canada, we had detailed procedures for how to answer questions, what information was provided and why. We don’t answer questions so much anymore, but we do provide a lot of information so I figured we better clearly understand what we do and why. This is more for us and all the students that come through my lab than it is for you. Really, it’s me, not you.

Backyard bacteria and consumers: use a thermometer
I’m really proud of the folks who contribute to barfblog and bites.ksu.edu.
This morning, I wrote all the contributors from yesterday and said, I’m really proud, or good job, or something like that. The mixture of food safety content and personal experience on barfblog.com was excellent yesterday.
Debora MacKenzie at New Scientist magazine seems to have noticed as well, and writes in a blog piece this evening,
Doug Powell food safety expert at Kansas State University and editor of the excellent barfblog says that the only way to ensure the safety of ground burgers is to use a tip-sensitive digital thermometer to make sure the whole patty has reached the 71 ˚C (160 ˚F) needed to kill E. coli.
Like I said, I’m proud to have a lot of smart folks around me.

Bye bye, listservs
This is what I sent out to all the previous subscribers of my various listservs over the years. I'm grateful for all the support I received and still pissed that the University of Guelph just scooped up the leftover money for their paper clip fund. Seriously, I left $140,000 that all you great supporters provided for news, and Guelph just sucked it up. Why anyone would ever give them another dime is beyond me. But I'm just a widget; I get that.
The listserv you have been subscribed to no longer exists. All of the activities of the International Food Safety Network at Kansas State University have been consolidated under bites.ksu.edu.
The 9,000 or so direct subscribers to fsnet-l have been transferred to bites-l. We’re still working on a daily digest version, so will keep the istserv going for now.

The University of Guelph copyrighted the name, Food Safety Network in Canada, without telling anybody. A Network was cool before Al Gore invented the Internet in 1995, but now?

Foodborne illness can be an unpleasant experience or something more serious. The World Health Organization estimates up to 2 billion people get sick from food and water each year – 30 per cent of all citizens in all countries.
Dr. Douglas Powell, associate professor of food safety at Kansas State University, leads a group of individuals passionately committed to reducing the incidence of foodborne illness, through research, teaching and information. The group strives daily to be the international leader in comprehensive and compelling food safety information that impacts individual lives – and reduces the number of sick people.
The electronic publications, barfblog.com and bites.ksu.edu, are comprehensive, current and compelling sources of food safety news and analysis, and help foster a farm-to-fork culture that values microbiologically safe food.
Research
• The effectiveness of food safety messages and media in public discussions of food safety issues, such as the risks of listeria to pregnant women, legislation surrounding raw milk, public availability of restaurant inspection data, and the safety of fresh produce, are evaluated through qualitative and quantitative methods.
• Observational research methodologies are used to quantify individual food safety behaviors from farm-to-fork, to enhance handwashing compliance, thermometer use, food packaging information and interventions that can reduce the number of people that get sick from the food and water they consume.
Teaching
• A graduate program in food safety risk analysis – including food safety, language, culture and policy -- is being developed and will include distance-education.
• Courses are currently taught in Food Safety Risk Analysis, and Food Safety Reporting.
Information
• Dr. Powell is the publisher and editor of bites and barfblog, rapid, reliable and relevant sources of food safety information. Dr. Ben Chapman of North Carolina State University is the assistant editor.

Chapman gets PhD
Irony is pretty ironic sometimes.
On the three-year anniversary of me officially starting at Kansas State University, two-years after the beginning of barfblog.com, and a year after going down the baby road yet again, Chapman finally gets his PhD, and all the staff at the remnants of the Food Safety Network at the University of Guelph are fired.
Me, I just keep on truckin’ on. We’re working out the kinks with bites.ksu.edu, and barfblog.com had yet another record number of visitors today. So for the best food safety news and analysis, visit often.

The new web site is sorta ready to go.
I say sorta because it’s a work in progress that can be continuously updated and improved. The beta-version, warts and all, is now available.
The fastest way to receive food safety news is to subscribe to barfblog.com. If something’s happening, we try to blog it, rapidly, and with analysis. barfblog can also be followed on twitter.
bites.ksu.edu is continuously updated throughout the day and night and other times. When sufficient news exists, I will send out a summary, much like the current FSnet listserv. You can subscribe to receive this daily (or more) summary on the front of bites.ksu.edu, and can choose between html (pretty pictures and hyperlinks) or text-only formats. Or you can visit the website and see how it changes throughout the day.

FSnet funding, format and future: bites
I knew it was time to change things when new students repeatedly asked, “what’s a listserv?”
The four listservs – FSnet, Agnet, Animalnet and FFnet – are going to be collapsed into a daily publication called bites (below, sorta as shown) by the end of the month.
The text versions of all four listservs, as well as FFnet, are going to disappear immediately, although they will still be available through the archives at foodsafety.ksu.edu.
I have to focus my activities. And the level of sponsorship has declined. However, once bites is up and rolling, new opportunities for sponsorship will be available.
The best way to receive breaking news is to subscribe to barfblog.com. RSS feeds for immediate news will be available once the bites.ksu.edu site is up and running.
