Special Agent Oso Feeds a Llama at the Petting Zoo
I want a llama. Or so I’ve been telling Doug ever since I saw Tina the lasagna-eating llama in one of my favorite films, Napoleon Dynamite. Now we have a baby and our lifestyle is not compatible with llama tending.
This morning when Sorenne and I got up, we turned on the Disney channel to watch Special Agent Oso. The episode, “A Zoo to a Thrill” showed Oso helping June Kim feed a llama at the petting zoo. Special Agent Oso always has to accomplish “three special steps” in each of his missions. This time it was:
- step one: get the llama food
- step two: wait your turn in line
- step three: feed the llama.
Not included in the steps, but clearly shown in the episode were washing hands before getting the llama food and after feeding the llama. Our veterinary friend Kate Stenske told us that washing your hands before handling the animals is a question of not transmitting whatever you have to the animals and washing them afterwards is about not transmitting what the animal has to you.
I was especially pleased in this episode to see that June Kim’s father stayed outside of the petting zoo area while he fed his baby a bottle. Bottles and pacifiers are at high risk for cross-contamination in such areas because some of the pathogens can be aerosolized.
If Sorenne wants to meet a llama, I may take her to a petting zoo someday, or to our friend and contractor Russell’s house. We’ll try to make sure she washes her hands so her first visit to a zoo does not give her a bad thrill.
Shopping cart sanitation (and don't let kids lick packages of raw meat)
Amy, Sorenne and I go grocery shopping fairly frequently. The 11-month-old is curious about everything, a trait I called the day she was born; she's alert, curious and increasingly mischievous.
When she was strong and co-ordinated enough to sit on her with a seatbelt on the seat behind the handle, a battle of wills soon emerged as Sorenne would have her hands on the handle, then in her mouth, or worse, would try to suckle the handle.
At this point I become much more rigorous and consistent about using those sanitary wipes to wipe down the shopping cart seat and handle.
In 2004, clear displays promoting shopping cart sanitation were novel. And this one from Phoenix (upper right) is far more dramatic and attention-grabbing than a small container nailed to a bleak wall beside the shopping carts, which is still the norm today.
But things are changing.
Last year, USA Today reported that supermarkets and other retailers that provide shopping carts are increasingly looking to limit germ exposure for customers and their families.

The trend continues to grow. Newspuller Gonzalo was in the Manhattan (Kansas) Target store recently and snapped these shots (below).
Parents and caregivers also have to think like the bad bug: like, don’t give the kids packages of raw meat to play with or leave within reach. Olga Henao, an epidemiologist for the U.S. Centers for disease control told USA Today last year that doing so triples the chance they may contract salmonella and quadruples it for campylobacter.

Automated hand sanitizer - Chicago, Illinois
The newly married Gonzalo Erdozain, one half of the Erdozain news pulling siblings and a pre-vet student at Kansas State, writes in a state of marital bliss:
As I walked down an aisle in Chicago's Navy Pier, I couldn't help but notice a nice little automated hand sanitizer dispenser in the middle of the wall, which just happened to be right in between both exits of the restrooms.
I didn't actually used the bathroom, but this fancy machine answered a longstanding question – more of a concern actually – I've always had: Washing my hands is pretty much useless if the guy that exits the bathroom before me doesn't and goes and touches the door's knob or handle. So, by having this on the other side, I feel a little better about having clean hands.
Should fruits and vegetables be cleaned with bottled washes? No
I’ve already posted on some of the dubious marketing and safety claims that accompanied the original Fit produce wash before it was abandoned by Procter & Gamble in 2001.
On Monday, the Los Angeles Times takes a look at produce washes out there – such as Veggie Wash, Fit Fruit and Vegetable Wash, Bi-O-Kleen Produce Wash, Earth Friendly Products Fruit & Vegetable Wash and Eat Cleaner All Natural Food Wash and Wipes -- and concludes water is just fine.
Sandra McCurdy, extension food safety specialist in the School of Family and Consumer Sciences at the University of Idaho in Moscow, Idaho, says that most produce is pathogen-free because it's been washed during processing and because handlers take steps to avoid contaminating the fruits and vegetables they stock in the produce aisle. But if it is not, a thorough rinse under water is usually all that's needed to remove most pathogens.
Michael Doyle (left), professor and director of the Center for Food Safety at the University of Georgia in Griffin, Ga. (Doyle developed an antimicrobial technology that was licensed earlier this year by the makers of Fit produce wash.) said,
"If the bacteria get into the tissue during processing, it's too late, it's trapped in the tissue.”
As for pesticides, there's little scientific evidence to support claims that washes do a better job than water when it comes to removing them, says Anne Riederer, a professor of environmental and occupational health at Emory University in Atlanta, Ga.
Fit, food and fresh produce
Food is 21st century snake oil. In an era of unprecedented affluence, consumers now choose among a cacophony of low fat, enhanced nutrient staples reflecting a range of political statements and perceived lifestyle preferences, far beyond dolphin free tuna.
On May 17, 2001, Procter & Gamble announced that it was discontinuing its Fit Fruit & Vegetable Wash in the United States, Canada and Mexico effective September 28, 2001. The company said the market was too small for continued investment.
But FIT is still out there. And someone e-mailed me about it the other day.
I’m not up on the current version of Fit being marketed, but in fall 2000, I contacted P&G to ask for the data substantiating the claim that Fit would eliminate 99.9 per cent of bacteria on fresh produce,
After a bunch of calls to various PR types I got hooked up with some scientists at P&G in Cincinnati, who verbally told me that sample cucumbers, tomatoes and the like were grown on the same farm in California, sprayed with chemicals that would be used in conventional production, and then harvested immediately and washed with Fit or water. The Fit removed 99.9 per cent more, or so the company claimed, because no data was ever forthcoming.
One problem. Many of the chemicals used have harvest after dates, such as the one tomato chemical that must be applied at least 20 days before harvest. Residue data on produce in Canadian stores reveals extremely low levels, in the parts per million or billion. So that 99.9% reduction is really buying consumers an extra couple of zeros in the residue quantity, all well below health limits.
No idea what the new Fit is promoting. But pathogens and chemicals in fresh produce need to be controlled on the farm, and in transportation and distribution.
Can you wash your hands too much?
I’ve spent the summer on the east coast alongside my classmate Stephan, while we do internships for school. Though we have similar interests in veterinary medicine, we have very different philosophies about food s
afety. I am a bit like Monk, at times going overboard on cleanliness and my tendency to be a “germaphobe” with excessive handwashing.
Stephan represents the other side of the spectrum, more of a “the more bugs I’m exposed to, the more my immunity builds.” This is definitely a valid viewpoint. Hand sanitizer opponents say that antibacterial soaps and gels may cause more harm than good. They remove bad bacteria, but can also remove the good bacteria, the bacteria that protect skin surfaces from the bad bacteria. Antibacterials may also help breed drug-resistant bacteria.
It’s a tricky tightrope to walk. Washing your hands before eating is a good way to reduce your risk of foodborne illness, but removing too much beneficial bacteria from skin surfaces or gut can leave the body more susceptible to harmful bacteria and may cause allergic or autoimmune reactions.
The bottom line is that regular soap works great in moderation, and it should always be used before consuming food or sticking your fingers in your mouth. What kind of soap is best? I tend to lean towards the foaming liquid soap, mostly because it comes in great scents, but basically soap is better than no soap. Follow Doug’s mantra to wash your hands and don’t eat poop.
Do you like safefood Ireland's new advert?
The Don’t Take Risks campaign focuses on food hygiene in the domestic kitchen. To help minimise the risks of food poisoning in the home, the advertising combines dramatic kitchen images and an ominous voiceover with a journey into the microscopic world of food poisoning bacteria to deliver powerful messages to consumers.
Most people think they wash their hands and utensils properly while preparing food and that they cook meat and chicken thoroughly. The truth is, all too often, they don't. This campaign is a powerful, visual reminder to consumers of the dangers of poor food safety behaviour, as they may often be unaware of how their day to day food preparation habits can cause themselves and others harm.
By following some simple food hygiene practices, consumers can help prevent the spread of food poisoning bacteria around the kitchen.
A recent safefood study recorded the food hygiene practices of 120 participants to look at the way in which people prepare meals in their homes. The participants, who were recruited from throughout the island of Ireland, prepared two meals: a homemade beef burger and a warm chicken salad.
There were two phases of the study:
* phase 1 - conducted in test kitchen and
* phase 2 - conducted in participants’ own homes.
Each phase involved 60 participants and there were equal numbers in Northern Ireland and the Republic of Ireland.
In the test kitchen study, participants were asked to prepare the meals as they would normally at home and swabs were taken at various points in the kitchen and samples were taken of the salad and cooked meat. The swabs and samples were analysed for the presence of raw meat bacteria. Throughout the session, the participants' food handling practices were observed via web-cams.
In the domestic kitchen study, arrangements were made for the researchers to visit at a suitable time for the participants to prepare the required meals.
Participants’ food handling practices were observed via web-cams. Swabs were taken from four kitchen areas as well as participants’ hands and from samples of the prepared meals to test for the presence of bacteria.
The research findings highlighted real food safety issues in the kitchen relating to food preparation and hygiene, with highly risky behaviours around handwashing, preventing cross-contamination via kitchen utensils such as knives and chopping boards, and inadequate care taken to ensure that the chicken and mince were properly cooked.
For example:
* 84% of people did not wash hands properly after handling raw chicken
* 72% did not properly wash the knife used in preparing raw chicken before reusing it on salad vegetables
* more than a third of what participants considered to be 'cooked' beef burgers were contaminated with raw meat bacteria
* more than half of consumers did not thoroughly wash the chopping board used to prepare raw mince before reusing it to prepare salad
* one third of participants still had raw meat bacteria contamination on their hands after preparing the meals.
Cross-contamination at checkout
Katie and I were craving hamburgers this weekend and Doug decided to indulge us. At the supermarket on Saturday he picked up some ground beef along with our normal cart full of produce and other proteins. As usual, I tried to separate the items in the cart so that the fresh produce was not touching the beef, pork, or salmon filets, even though all the meat was wrapped.
Checkout on Saturdays is always busy, and with a baby, a shopper’s plus card, a payment method, eco-friendly shopping bags, and chatter with the cashiers and baggers, there are plenty of distractions. On this particular day, the new store manager was bagging our items and complementing Doug on his culinary ability: “I can see you must be a good cook because those items require skill.” I chimed in with full-hearted agreement. Doug’s an awesome cook.
In the meantime, as the hamburger was being passed over the scale and scanner, juice poured out all over the place. I watched the cashier and was about to say something, but she pulled out a sanitary wipe and cleaned her hands. She then proceeded to pass every one of our produce items over the scale and through the hamburger juice. I felt like I should say something but wanted Doug to be the bad ass. And as I stood there stunned, not wanting the store manager to fire the woman, she completed our transaction and was on to the next person.
As soon as we exited the store, I declared we would have to wash every piece of produce in the bags. It didn’t even occur to me until later that the following person’s items were also going to pass over that potentially E.coli-laden scale. And maybe the same thing had already happened five times before we arrived. Maybe we were already at risk before our hamburger leaked all over.
It’s important to wash fresh fruits and vegetables to remove external contamination, because you never know where it’s been. Once your produce is exposed, it can contaminate other items in your bag or at home. Even if you are a careful consumer, it’s difficult to know just where that tomato has been.
(P.S. Doug cooked the burgers to a perfect 160F and they were delicious.)
Does organic produce need to be washed?
Organic produce is so virtuous that UK writer Lucy Siegle had to ask, Does organic produce need to be washed?
“Health professionals are adamant that all fresh produce should be cleaned to remove potential pathogens. … Even produce sold as ‘pre-washed’ needs to be washed. … As organic produce has been annexed by big commercial enterprises, it is increasingly scrubbed up in huge pack houses that bring together produce from large numbers of farms for a good dousing.”
Siegle needs to research beyond the big ag conspiracy. A panel of scientists with expertise in microbial safety of fresh produce concluded in 2007 prewashed bagged salads should not be washed again at foodservice or at home.
"Leafy green salad in sealed bags labeled “washed” or “ready-to-eat” that are produced in a facility inspected by a regulatory authority and operated under cGMPs, does not need additional washing at the time of use unless specifically directed on the label. The panel also advised that additional washing of ready-to-eat green salads is not likely to enhance safety. The risk of cross contamination from food handlers and food contact surfaces used during washing may outweigh any safety benefit that further washing may confer."

Salad Smackdown at Food Micro '08
The press releases were fast and furious and the excitement non-stop today in response to some new research about Salmonella sticking to salad greens that was presented at Food Micro ’08 in Aberdeen.
Professor Gadi “Flagella” Frankel of Imperial College London was first into the ring yesterday with a press release containing tragically cliché headline, How Salmonella bacteria contaminate salad leaves -- it's not rocket science, and produced by his own Imperial Colleague that said,
"In their efforts to eat healthily, people are eating more salad products, choosing to buy organic brands, and preferring the ease of 'pre-washed' bagged salads from supermarkets, then ever before. All of these factors, together with the globalisation of the food market, mean that cases of Salmonella and E. coli poisoning caused by salads are likely to rise in the future. This is why it's important to get a head start with understanding how contamination occurs now.”
U.K. media outlets rose to the challenge, with the Horrible Herald inverting the order of the press release to lede with,
“The growing popularity of pre-packed salads is likely to lead to an increase in food poisoning cases, scientists warned yesterday.
“They said the increased uptake in the salads in particular, but also in fruit and vegetables, is likely to be reflected in a future rise in food poisoning.
Professor Gadi Frankel, from Imperial College, said a greater understanding of how salads are contaminated is important because cases of food poisoning caused by salads are "likely to rise in the future."
The Fresh Prepared Salads Producer Group – really, that’s the association name, how about Big Salad – today, “completely refutes suggestions in the press that prepared salads are unsafe to eat," and tag teamed with Prof. Bill “Critical” Keevil, professor of environmental health care at the University of Southampton, who was at the conference in Aberdeen where the salad research which sparked the stories was presented, and said,
"I was extremely disappointed by the quality of the data presented and its interpretation. We have known for a long time the various mechanisms that bacteria can use to attach itself to a range of surfaces, including plants. This is not new."
Big Salad said in a statement:,
"Our products sold as 'washed and ready to eat' are just that. We have long recognised that to produce a safe-to-eat salad one needs safe-to-eat produce off the field. To achieve that, we strive to ensure that dangerous microbes do not get the opportunity to contact our crops - such that hypotheses as to how they initially adhere are irrelevant. The UK prepared salads sector has an unrivalled safety record and employs stringent controls, described as 'excellent' by the FSA - not necessarily the case elsewhere in the world. There has not been a confirmed outbreak associated with prepared salad since 2001 in the UK. … There is absolutely no evidence to suggest that re-washing a prepared salad will do any good at all - and it's even possible that exposing the salad leaf to the 'kitchen sink' will increase the food safety risk. Indeed, the Advisory Committee on the Microbiological Safety of Food (FSA) has recently determined that re-washing is unlikely to remove any contamination remaining on the produce after the manufacturing process.”
To further muddle things, Judith “Hey Now” Hilton wrote on a U.K. Food Standards Agency blog that,
“In fact, while we advise that it's a good idea to wash salad items in general, there is no need for consumers to rewash ready-to-eat bagged salads unless it says otherwise on the packet. You can best help yourself by following good food hygiene practice at home – it's important to follow the 4Cs – cooking, cleaning, chilling, avoiding cross contamination.”
Smackdown. Consumers, if you get sick from ready-to-eat salads, it’s your fault.
Should bagged salads be washed at home?
Yes, says one of Britain's leading microbiologists, Professor John Threlfall, of the government's Health Protection Agency (HPA). The Scotsman reports today that Threlfall said prepared salads and other "ready-to-eat" foods pose a salmonella threat and he urged consumers to disregard assurances on packaging and wash the contents again before eating.
The U.K. Food Standards Agency (FSA) also agreed that extra precautions may be necessary with pre-washed products, with a spokesman quoted as saying,
"Our advice is to wash all lettuce, including bagged lettuce, when you get it home. We will review this advice if we receive extra evidence and reassurances from the industry about their cleaning processes."
No, says the industry, some government agencies and some academics. The products are sufficiently washed at the processing facility, are ready-to-eat, and there is a potential for cross-contamination.
David Barney of the Fresh Prepared Salads Producer Group, which represents UK salad companies, was quoted as saying,
"I am very puzzled by this advice. I don't understand why he is saying this and we would strongly argue against it. Our cleaning processes are robust and well-managed. The wash the salad gets is as good as any wash you would give in the home, and washing it again at home is not going to make a substantive difference to the safety of the product. … There is almost no food-borne illness directly associated with retail prepared salads, because the washing systems have been particularly good. ... It's widely known that kitchens - and particularly kitchen sinks - are the source of much cross-contamination."
What's missing in all of this is data to support either recommendation. And the question is the wrong one, focusing on what consumers can do. Washing of fresh produce, particularly leafy greens like spinach and lettuce, is of limited use in removing dangerous microorganisms. The contamination, especially with E. coli O157 and Salmonella, must be prevented on the farm.
